1. Saint André: triple cream

2. Port Salut: creamy, sharper, little more funk
• Rating 5/5 epic
3. Sartori Bellavitano Garlic Herb: very herbaceous, sharp cheddar and parmesan
• Rating 5/5 epic
4. Merlo Bellavitano: sharper parm and cheddar with the merlot acidity
• Rating 5/5 epic
5. Bourbon Bellavitano: smoother, milder flavor, subtle bourbon notes in the rind
• Rating 5/5 epic
6. Beechers Flagship Cheddar: wonderfully balanced sharp cheddar, not as sharp as I prefer, but wonderful
• Rating 4/5 outstanding
7. Cellars at Jasper Hill Cabot Clothbound Cheddar: medium sharp, creamy, nutty, not too aggressive
• Rating 4/5 outstanding
8. Smoking Goat: milder cheese, kind of a muenster flavor, subtle smoke
• Rating 3/5 good
9. Cypress Goat Cheddar: medium goat cheese, not sharp, more cheddar flavor than goat cheese flavor
• Rating 3/5 good
10. Treasure Cave Gorgonzola: sharp, delicious blue cheese, excellent value
• Rating 4/5 outstanding
11. Murrays Stilton: more funk, creamy full flavor
• Rating 4/5 outstanding
12. Roquefort: massive flavor, creamy, very sharp, absolute monster of a blue cheese
• Rating 5/5 Epic
13. Saint Agur: creamy, salty, sharp, notes of walnut, spicey finish, not as bold as the Roquefort
• Rating 5/5 Epic
14. Humbolt Fog: a creamy goat cheese, bold flavor, almost gamey,
• 4/5 outstanding
