Spicy Marinated Raw Crabs (Yangnyeomgaejang)

Main Ingredients: Fresh Flower Crabs (Male) - 1 kg (3 crabs)

Step 1: Preparing the Crabs

Clean the crabs with a brush.
Be especially thorough with the crab claws.
Remove any unnecessary parts.
Save the crab shells and internal organs separately for making crab stew.
Use scissors to quarter the shells, ensuring that the meat remains attached.

Step 2: Removing the Unpleasant Smell and Marinating

Pour 100ml of soju (or cooking wine) over the prepared crabs and gently rub to remove any unpleasant smell.
Be cautious as the crab shells can be sharp; use a utensil.
Prepare the seasoning mixture: 3T soy sauce, 2T anchovy sauce, and mix.
Drain the soju from the crabs using a sieve.
Marinate the crabs evenly in the soy sauce mixture and refrigerate for 30 minutes.

Step 3: Preparing the Ingredients

Slice 1/2 an onion, 2 green onions (or 1/2 bunch of big green onions), and 3 hot green chili peppers into chunky pieces.

Step 4: Seasoning

Prepare the seasoning mixture with the crab liquid, 5T coarse red pepper flakes, 5T corn syrup, 1/2T sugar, 2T minced garlic, and 1T minced ginger.
Mix the crabs with the seasoning mixture, add the prepared vegetables, and mix well.
Refrigerate for a day or consume it immediately.
Sprinkle sesame seeds before serving.
