Garlic Bread Muffins (quick and easy)

2 cups self raising flour
2 tsp sea salt
1 cup whey (or regular milk)
2 heaped tbsp mayonnaise
⅓ cup vegetable oil (I used rice oil)
A few leaves of silver beet, chopped
1 cup grated cheese
1 tsp oregano finely chopped or dried
1 large garlic clove, chopped

Method
Preheat the oven to 180C and thoroughly oil a muffin/cupcake tray.
In a mixing bowl, combine flour, salt, silver beet, garlic, and oregano.
Add whey, mayonnaise, oil and cheese. Stir until just combined.
Fill each muffin hole to the brim with batter, about 2 tbsp in each if not more.
Bake at 180C for 20 - 30 minutes, until raised and golden on top. When muffins are finished they should easily slide out of their tin.
Allow to rest a few minutes after removing from the oven, then place muffins on a cooling rack. Can be kept in the cupboard for up to a week. If they get a little dry just warm them up before eating!
