Oven roasted eggplant sandwich with a spicy homemade sauce on crunchy ciabatta bread. The sauce is roasted red pepper, garlic, and jalapeño blended together. It was super delicious and I don't feel bad for eating it because its kinda healthy right?! Maybe. They make a lovely healthy snack.
