It was so good that I made it twice in a week.
His recipes have a warm and homely feel to them so I’ll be trying more.
My version serves about 2 people so I essentially halved the ingredients from Rik’s recipe.
The tikka recipe I found on Google and modified it to my liking.
Allergy warning: Dairy, Nuts, Mustard powder
Tikka seasoning for 1kg chicken (halve for 500g):
1 tbsp Mustard powder
2 tbsp Coriander powder
1 tbsp Ginger powder
½ tsp Salt
1 tbsp Garlic powder
2 tbsp Cumin powder
2 tbsp Garam Masala
2 tsp Mint sauce
½ cup Natural yogurt
2 tbsp Oil
Mix and leave in fridge for when ready to cook
Butter sauce for 2 ppl:
1½ Onion
½ tbsp Garlic or paste
½ tbsp Ginger or paste
1 tbsp unsalted Butter
1 tbsp Ghee
200ml Passata
1 tbsp Tomato purée
170ml Chicken stock
2 tbsp Cashew nuts
1½ tbsp Coconut milk powder
2 tbsp ground Almonds
1 tsp Kashmiri chilli powder (less if wanted)
½ tsp Paprika
1 tbsp Coriander powder
½ tsp Cumin
¼ tsp Turmeric
½ tsp Garam Masala
1 tsp Methi leaves
75ml Double Cream (more if wanted)
1½ tsp Honey
Last stage ingredients:
½ tsp Garam Masala
Sprinkle Methi leaves
1 tbsp butter
Garnish:
Coriander
Oven setting: 180 °C
What you’ll need: Skewers, Large Ceramic dish, Blender
