BASIC SOURDOUGH BREAD
300g bubbled starter
500g flour
1 cup water
salt, sugar, herbs or spices to taste!
Combine all ingredients and knead by hand for 8 minutes, or on a low speed in a mixer for 10 minutes.
Rise for 3-4 hours until doubled in size.
Separate and shape to your desired food, and rise for another 1-2 hours, til doubled.
Bake at 180 for 40 minutes if making bread, 20-30 minutes for rolls.

FRIDGE METHOD
Leave dough in fridge for first rise. Remove when ready to use and leave in a warm place until first rise is finished or the dough has warmed up. Separate, lightly knead and shape as usual. Rise for 1-4 hours until doubled and cook as usual!
